Rosalinda is Toronto’s hot new Mexican restaurant in the financial district, and it’s vegan!

The 136-seat spot has been 5-years in the making, and the attention to detail shows. You will love sipping a cocktail in the bar/lounge area, which has a layered and textured feel.

The luxurious carpets on top of the polished concrete floors, stunning wall murals and embroidered chairs all contribute to the cozy and casually sophisticated aesthetic.

The dining area is stunning.

The high glass ceilings with exposed beams draped with greenery gives the feeling of being in a greenhouse. The effect is modern and bright, but also intimate.

Perfect for business and pleasure.

In fact, Rosalinda owners visited vegan restaurant institutions Gracia Madre and Crossroads in Los Angeles for inspiration when designing the menu and the interior at Rosalinda. We felt a little like we were swept away to California for the evening at Rosalinda, and we liked it.

And the food! Rosalinda has a fresh take on Mexican fare. The flavours are full and bold but the fresh ingredients keep the dishes fun and vibrant. And, so pretty!! These are some beautiful tacos, burgers and tostadas.

The Roasted Japanese Eggplant dish was our favourite, with salsa macha, sikil pak, cashew crema, cilantro and pomegranate. This was the perfect blend of textures and flavours. The eggplant had bite, the crema was so smooth and the cilantro and pomegranate brightened up the dish and made it pop.

The Roasted Cauliflower Tostada has kick! With sikil pak, almonds, herb salsa verde and pickled chilies this is a flavour explosion. We especially loved the roasted almond crunch on this one for added texture.

If dessert is your thing, and you’ve been dreaming of vegan churros, then Rosalinda has you covered. The churros were dusted with the traditional cinnamon sugar and were so delicious. We could really taste the banana caramel coming through.

We had high expectations because Rosalinda is a collaboration between three successful Toronto restaurateurs: Grant van Gameren, Max Rimaldi, and Jamie Cook.

Rimaldi and Cook also own Pizzeria Libretto which holds a special place in our hearts for their incredible vegan options; including in-house-made vegan cheese. Check out all the details here and here.

Those expectations were exceeded. The food was fantastic, the atmosphere stunning and the warm welcome by the hosts and staff felt so welcoming.

Rosalinda claims they serve “vibrant, feel-good vegan Mexican cuisine”.

We couldn’t agree more.
